Who doesn't love sweet potato fries?!

Sweet Potato Fries

Ingredients:

3 Large Sweet Potatoes

4 Tbs Coconut Oil

Directions:

  1. Preheat oven to 375 degrees
  2. Peel Sweet Potato
  3. Slice the sweet potatoes into thin strips
  4. Wash thoroughly and let soak in water for 30 minutes
  5. Melt the 4 tablespoons of coconut oil in microwave for 30 seconds or until oil Is completely melted
  6. Drain water off sweet potatoes and pour coconut oil over sweet potatoes and toss until coconut oil Is completed coated on the sweet potatoes
  7. Spread sweet potatoes on a cookie sheet where they are not touching
  8. Bake for 30 minutes, halfway through flip sweet potatoes over so they can brown on both sides. Cook until potatoes are soft and cooked through
  9. Serve and enjoy

THIS RECIPE IS DAIRY FREE, NUT FREE, GLUTEN FREE, VEGAN,
AND VEGETARIAN.

Tips:

If you want sweet potatoes to be crunchy, skip soaking In water but this will Increase the cooking time so be sure to check the potatoes regularly so they do not overcook. The coconut oil brings out a natural sweetness to the potatoes but If you want them to be sweeter drizzle either honey or brown sugar Immediately after you remove the potatoes from the oven
